Khichuri Bhogখিচুড়ি ভোগ
The Durga Puja bhog served to everyone who queues at the pandal — a large-scale gobindobhog khichuri with labra, and the meal most people associate with the festival's taste.

Ingredients
- 2 cups gobindobhog or short-grain rice
- 1 cup moong dal
- Cauliflower, potato, peas, carrot, green beans
- Ginger, bay leaf, cumin, turmeric, ghee
- Salt, sugar, water
Method
- Dry roast the moong dal until aromatic and set aside.
- Heat ghee, add bay leaf, cumin and grated ginger, then the vegetables and a pinch of sugar.
- Add the rice and dal with turmeric and salt, then water at roughly three times the rice volume.
- Cook until soft and slightly soupy — pandal khichuri is deliberately loose.
- Serve with labra, a mixed vegetable mishmash, and a wedge of lime.
