Thekuaठेकुआ
The signature Chhath offering — a wheat flour and jaggery biscuit that must be made without any of the restricted ingredients, and is what every family carries to the ghat.

Ingredients
- 500 g whole wheat flour
- 250 g jaggery
- 100 g ghee
- 1/4 cup grated coconut
- Cardamom, fennel seeds
- Ghee for frying
Method
- Melt the jaggery in a little water and cool it slightly.
- Knead the flour with the jaggery water, ghee, coconut, cardamom and fennel into a stiff dough. Do not add salt.
- Rest the dough for 20 minutes, then roll small discs and press the traditional patterns into them with a thekua mould or a fork.
- Fry on low heat in ghee until deep golden and crisp. Slow frying is what makes them keep for weeks.
- Cool fully before packing into the soop for the ghat.
