Khichdaखिचड़ा
The Hyderabadi Muharram dish — a slow-cooked wheat, lentil and meat porridge, made in large quantities and distributed as part of the mourning period's community food.

Ingredients
- 500 g mutton or beef
- 1/2 cup broken wheat
- 1/2 cup mixed lentils and chickpeas
- Fried onions, ginger-garlic paste
- Whole spices, chilli, turmeric
- Ghee, mint, coriander, lemon
Method
- Soak the wheat, lentils and chickpeas overnight.
- Cook the meat with ginger-garlic and spices until tender.
- Cook the soaked grains until very soft.
- Mix the meat and grains and mash and stir on low heat for 45 minutes.
- Finish with fried onions, ghee, mint, coriander and lemon, and distribute widely.
