Avialअवियल
The defining Onasadya dish — a thick mixture of nine or more vegetables with coconut and curd, and the one that most non-Malayalis know by name.

Ingredients
- Mixed vegetables (yam, raw banana, drumstick, carrot, beans, pumpkin, ash gourd, snake gourd, brinjal)
- 1 cup grated coconut
- 2 green chillies, cumin
- Curd, coconut oil, curry leaves
- Turmeric, salt
Method
- Cut the vegetables into batons and cook with turmeric and salt plus a little water, keeping them firm.
- Grind coconut, green chilli and cumin to a coarse paste.
- Add the paste and cook for 3–4 minutes without covering, so the dish stays dry.
- Add a spoon of curd, drizzle coconut oil and add fresh curry leaves. Mix with a wooden ladle, never a metal spoon.
