The Hyderabadi Ramadan staple — a slow-cooked wheat, lentil and meat porridge that is genuinely the dish people queue for all month at Pista House and Shadab.

Ingredients
- 500 g mutton or chicken
- 1/2 cup broken wheat
- 1/2 cup mixed lentils
- Fried onions, ginger-garlic paste
- Whole spices, chilli, turmeric
- Ghee, mint, coriander, lemon
Method
- Soak the broken wheat and lentils for 4 hours.
- Cook the meat with ginger-garlic, turmeric and chilli until tender.
- Cook the wheat and lentils separately until very soft, then blend coarsely.
- Combine everything and mash and stir continuously on low heat for 45 minutes until the texture is a thick porridge.
- Finish with fried onions, ghee, mint, coriander and lemon.
